Hearty, satisfying and quick lunch recipes for people working from home

While working from home does give you greater opportunities to cook, you may not always get enough time to cook a nutritional meal for yourself. Here are some delectable, quick recipes to prepare that perfect healthy meal; as busy at-home workers will attest, cooking whilst working at home is no mean feat.

Speedy recipes perfect for people working from home

  • Cheddar garlic grits with fried eggs

450 ml water
100 grams quick cooking grits (found by the oatmeal in most stores)
1 clove garlic, grated
56 grams grated cheddar cheese
1 tablespoon chopped chives
4 large eggs
salt and pepper, to taste

Procedure: Bring the water to a rolling boil in a saucepan. Reduce heat to medium, stir in the grits and garlic, and cover. Continue stirring for about 5-7 minutes, until the grits have thickened. After you remove the saucepan from the heat, stir in the cheddar and then sprinkle chopped chives. Add salt and pepper to taste. For the fried eggs, heat a non-stick frying pan over a medium heat. Add olive oil/butter, crack the eggs into the pan and cook over medium-low heat until the thick whites begin to turn opaque. Carefully flip the egg over and continue cooking until the yolk has cooked. For serving: pour the grits into shallow bowls and top each bowl with two eggs and more salt and pepper.

  • Chicken and black bean tacos


1 can black beans, drained
300 grams pre-cooked chicken
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon lime juice or white vinegar
1 package small soft taco tortillas

Taco toppings: Shredded lettuce, diced tomatoes, diced onions, diced peppers, shredded cheese.

Procedure: Combine black beans, chicken, cumin, chilli powder, lime juice/vinegar and salt and pepper to taste in a large, microwave-safe bowl. Heat until hot, about 3 minutes. You can now serve it on tortillas, topping it with your favorite taco toppings.

  • Classic macaroni salad


450 grams macaroni, cooked and cooled
4 hardboiled eggs, chopped
1 sweet onion, finely diced
225 ml mayonnaise
1 tablespoon mustard
1 tablespoon vinegar
Sliced green olives
Salt and pepper to taste

Procedure: Place macaroni in a large bowl, add chopped eggs and diced onion. In a small bowl, combine the mayonnaise, mustard and vinegar, stir well and add this to the macaroni. Also, add the chopped olives. For garnishing, add salt and pepper as needed. Chill in the fridge for 30 minutes before serving this delicious, creamy salad.

  • Grilled chicken with honey mustard glaze

2tbsp butter
59 ml cup honey
59 ml Dijon mustard
1 tbsp olive oil, more for grill
2 tbsp fresh lemon juice
Salt and freshly grounded pepper
4 boneless, skinless chicken breasts
Parsley for garnish

Procedure: Add butter in a microwave-safe bowl, heat until melted then stir in honey, Dijon mustard, olive oil and lemon juice. Season with salt and pepper to taste, and then put half the honey mustard mixture in a second bowl.

For grilling, preheat the grill to 425 degrees, season both sides of the chicken with salt and pepper. Brush grill grates with oil and then grill chicken for about 4 minutes. Now, brush the chicken with honey mustard mixture and continue to grill until chicken is cooked through (4-5 minutes longer). To garnish this mouthwatering grilled chicken, brush with the remaining honey mustard mixture and leave to rest on a plate. Don’t forget to sprinkle chopped parsley before serving.
